1/4 c. finely chopped onion
1/2 c. butter
1/3 c. flour
4 c. milk
1/2 t. salt
1/8 t. pepper
1½ c. shredded Swiss cheese
1 c. diced Canadian bacon
1/3 c. chopped pimiento
16 hard-cooked eggs, quartered
1½ c. soft bread crumbs
3 T. butter, melted

Recipe
Cook onion in butter until tender. Blend in flour, salt and pepper. Add milk, gradually to form smooth white sauce. Add cheese, stir until melted.
Place half the eggs in bottom of 3 qt. casserole. Add half the bacon and pimiento. Pour half the sauce over this and repeat layers.
Cover & bake at 375* for 45 minutes; uncover and sprinkle with bread crumbs. Bake another 15 minutes; serve on toast points.
