Baked Oatmeal

1/2 cup melted margarine
2 beaten eggs
1 teaspoon vanilla
1 cup milk
3 cups regular oats, not instant
1 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
Raisins and coconut, optionalRecipe
Preheat oven to 350 degrees and grease 8-inch baking dish. Combine margarine, eggs, vanilla and milk. Stir in oats, brown sugar, baking powder, salt and cinnamon until combined. Add raisins and coconut, if desired. Pour into pan and bake for 35-40 minutes or until middle is set. Serves six to eight.
