    Banana Pineapple Coffee Cake

    1/2 cup butter or margarine
    2/3 cup sugar
    2 eggs
    2 cups flour
    1 tsp. salt
    3/4 tsp. baking soda
    1/4 tsp. baking powder
    1 cup mashed bananas
    1 15-ounce can crushed pineapple, well drained
    1/2 cup chopped pecans
    8 red maraschino cherries, halved (optional)

    Recipe



    Heat oven to 350.

    Cream butter and sugar until light and fluffy, add eggs and mix well. Combine flour, salt, baking soda and baking powder, blend into sugar mixture. Stir in banana, pineapple and nuts.

    Pour into greased and floured 8X8 baking dish. Place optional cherries on top with cut side down and bake for 40 - 50 minutes o runtil tests done.

    I had to bake my coffee cake a little longer as my oven bakes slow.

    Also I added a powdered sugar glaze when the cake was finished.
