    Easy Cheesy Salsa Potatoes

    List of Ingredients

    8 ounces shredded cheddar cheese
    1 cup thick and chunky salsa
    1/2 cup onion, finely chopped
    1/2 cup sour cream, light
    10 3/4 ounces condensed cheddar cheese soup
    1/2 teaspoon pepper
    24 ounces hash browns, frozen, thawed
    1/2 cup plain bread crumbs
    1/4 cup butter or margarine, melted

    Recipe

    1. Heat oven to 350. Grease 13x9 (3-quart) glass baking dish or pan with shortening. In large bowl, mix first 6 ingredients. Stir in thawed potatoes. Spread in prepared baking dish.

    2. In small bowl, mix bread crumbs and butter; sprinkle over potatoes.

    3. Bake 45 to 60 minutes or until cheese is melted and potatoes are tender.

    NOTE: The leftovers have refrigerated well. It is even being considered as a breakfast dish with scrambled eggs and bacon.

    Serves 8 (makes 8 cups)
