3/4 cup Onion, finely chopped
1 Tbsp. Olive Oil
1½ cups Buttermilk
1 large Egg, lightly beaten
1½ cups Biscuit Baking Mix
1 cup grated Sharp Cheddar Cheese, divided
1/2 tsp. freshly ground Black Pepper
2 Tbsp. Butter or Margarine, melted

Pre-heat oven to 400-F degrees and lightly grease a 9-inch round baking pan; set aside.
Sauté the chopped onion in the olive oil in a skillet over medium heat until golden brown, about 7-minutes. Set aside to cool.
Blend together the buttermilk and egg in a large mixing bowl. Blend in the biscuit mix, sautéed onion and about one-half cup of grated sharp cheddar cheese.
Pour the mixture into the prepared baking pan. Sprinkle the remaining cheese and black pepper over the top of the mixture.
Drizzle the top with the melted butter or margarine and bake for 30 to 35-minutes or until golden brown.
Let cool slightly before cutting into pie-shaped wedges to serve warm.
