    List of Ingredients




    PANCAKES:
    1 cup all-purpose flour
    1/4 cup powdered sugar
    1 cup milk
    2 eggs
    3 tbsp. melted butter or margarine
    1 tsp. vanilla extract
    1/4 tsp. salt

    FILLING: (DOUBLE THE SAUCE!!!!)
    1/4 cup butter or margarine
    1/4 cup brown sugar, packed
    1/4 tsp. ground cinnamon
    1/4 tsp. ground nutmeg
    1/4 cup light cream
    5 or 6 firm bananas, halved lengthwis
    garnish whipped cream & cinnamon

    Pancakes:
    Sift flour and powdered sugar into mixing bowl. Add milk, eggs, butter, vamilla and salt; beat until smooth. Preheat a lightly greased 6" skillet; add about 3 tbsp. batter, spreading to almost cover bottom of skillet. Cook until lightly browned, turning once. Remove to wire rack. Repeat with remaining batter, greasing skillet as needed. Makes about 10-12 pancakes.

    Filling:
    Melt butter in large skillet. Stir in brown sugar, cinnamon & nutmeg. Stir in cream and cook until slightly thickened. Add half of the bananas at a time, heat for 2-3 minutes, spooning sauce over. Remove from heat.

    Roll a pancake around each banana half and place on serving platter. Spoon sauce over and top with whipped cream & a dash of cinnamon if desired.

    Yield: 5 - 6 servings
