    List of Ingredients




    1 egg
    1 1/3 C all-purpose flour
    1 1/4 C. milk
    1/4 C. molasses
    3 tbs. vegetable oil
    1 tsp. baking powder
    1 tsp. ground cinnamon
    1/2 tsp. ground ginger
    1/4 tsp. baking soda
    1/4 tsp. salt (opt)

    Lemon Cream Cheese Topping:
    1 pkg. cream cheese, softened
    1 tbs. powdered sugar
    1/2 tsp. grated lemon peel
    1 1/2 tsp. lemon juice.
    (Beat all ingredients with electric mixer on medium speed until fluffy.)

    Recipe



    1) Make Lemon Cream Cheese Topping. Heat griddle or skillet over medium-high head or electric griddle to 375*; grease with cooking spray.

    2) beat egg with hand beater in medium bowl until fluffy. Beat in remaining ingredients just until smooth.

    3) Pour batter by scant 1/4 cupfuls onto griddle. Cook about 1 1/2 mins or until pancakes are puffed and dry around the edges. Turn and cook other side until golden brown. Serve with topping.
