    For the batter:
    3 eggs
    2 cups sugar
    ¾ cup cooking oil
    2 cups milk
    4 cups flour
    ½ teaspoon salt
    2 teaspoons baking powder
    2 cups peaches, drained and diced (save juice)

    For the filling:
    1 cup soft cream cheese
    1/3 teaspoon almond extract
    2 tablespoons peach juice
    ¾ cup sugar

    Recipe



    For the batter: Combine eggs, sugar, oil, milk, flour, salt and baking powder in large bowl; beat for 2 minutes. Fold in peaches. Spoon into greased-and-floured or paper-lined muffin tin cups. Prepare filling.

    For the filling: Combine all ingredients, and beat until smooth and creamy. Drop 1 tablespoon of filling into center of batter in pan. Combine 1/3 cup sugar with desired amount of cinnamon and sprinkle on top of batter. Bake at 400 degrees for 20 minutes.

    Makes 24 muffins.
