Poppy Seed Cheese Muffins

3/4 cup ricotta cheese
1 egg white, slightly beaten
4 teaspoons granulated sugar
1-1/4 cups rolled oats
1-1/4 cups sifted all-purpose flour
1/3 cup granulated sugar
3 tablespoons poppy seeds
1 tablespoon baking powder
1/4 teaspoon salt
1 cup milk
3 tablespoons corn oil
2 eggsRecipe
Heat oven to 375 degrees F.
In a small bowl, combine the ricotta cheese, egg white, and 4 teaspoons sugar. Set aside.
In a large bowl, mix together the oats, flour, 1/3 cup sugar, poppy seeds, baking powder, and salt. In another bowl, combine the milk, oil, and eggs.
Pour the milk mixture into the oat mixture and mix just until the dry ingredients are moistened. Spoon 1 tablespoon of batter into each greased muffin tin. Add 1 tablespoon of the ricotta cheese mixture. Top with 1 more tablespoon of batter. Bake for 22 to 25 minutes or until the muffins are lightly browned.
Makes one dozen muffins.
