Recipe Introduction
This starts right after you have fed your starter, left it on the counter overnight to get bubbly, and placed a cupful or two back in the refrigerator to keep for next time, & now have a cup or so left to work with.
List of Ingredients
1 to 1-1/2 cups starter
1 egg
2 tbsp. vegetable oil
1/4 cup nonfat dry milk or buttermilk powder
2 tbsp. sugar
1 tsp. salt
1 tsp. baking soda
Recipe
Combine starter, egg, oil & milk powder. Combine sugar, salt & baking soda (mashing out any lumps) and sprinkle over batter. Fold in gently & be sure your bowl is big enough so it can foam up without running over. Allow to set a few minutes and then fry on hot griddle. Smaller pancakes stay lighter & fluffier than great big ones.
The batter should be about the consistency of ordinary pancake batter, and if it's too thick, use some milk or fresh buttermilk to thin it.
