    1 cup honey
    1 cup sugar or sugar substitute
    1 cup heavy cream or light cream
    1 pound butter or margarine, softened
    1 teaspoon vanilla

    Recipe



    Spray a glass measuring cup with cooking spray before adding the honey. This will keep the honey from sticking to the measuring container. In a saucepan, combine the sugar, cream and honey. Heat on medium-high, stirring often until it just comes to a boil.

    Place butter or margarine in a blender or food processor and add the hot, sugar-cream-honey mixture. Blend on medium speed until well-mixed. Turn off blender and stir if needed. Add vanilla and blend again until all the ingredients are well-mixed. Spoon honey-butter mixture into a plastic container, cover and let cool in refrigerator. Serve on hot bread or on hot oatmeal or cream of wheat. Keep honey butter refrigerated.
