3 T. salad oil
1 c. chopped onion
3 1/2 c. frozen hash browns (from a 32 oz. pkg.)
1 1/2 t. salt (I also add a little pepper)
2 T. butter or margarine
1 gr. pepper. chopped
2 T. chopped parsley
1 1/4 c. milk
4 eggs, beaten
1 c. grated Swiss cheese

Preheat oven to 450*.
In med. skillet, heat oil. Add 1/2 c. onions and saute until soft. Add frozen hash browns and 1 t. salt. Cook over med hi heat until potatoes are soft, about 5 min. Pat into bottom and sides of a 9 in. pie plate, forming crust (I grease it lightly, first). Bake 20 min.
Meanwhile in same skillet, melt butter. Add gr. pepper, remaining onions and parsley and saute until tender. In med. bowl, combine eggs and 1/2 t. salt. Sprinkle crust with gr. pepper mixture and grated cheese--then pour in egg mixture. Bake 30 min or until set and lightly golden.
