Buttermilk Banana Cake

Recipe Introduction
This can be baked in either a bundt/tube pan, or two layer pans- your choice.
2/3 cup butter or stick margarine
1 1/4 cups packed brown sugar
2 eggs
1 tsp vanilla
Cream above until light and fluffy.
Sift the following together:
2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Add alternately to the egg mixture with:
1/2 cup buttermilk
3 mashed ripe bananas
Pour into greased pan(s). Bake at 350 degrees: 25 minutes for layer pans, 35-40 for bundt or tube pan.
Cool, and frost with cream cheese icing:
4 oz. cream cheese, room temp.
1 tablespoon milk (add more a tiny bit at a time, if needed)
1 tsp vanilla
3 cups powdered sugar
1 cup chopped walnuts, optional, for top of cake
Beat all together until creamy. Spread on top of cake and sprinkle chopped walnuts on top. This will make plenty of icing for the tube pan, but you may need to increase the recipe by about half, to make enough to frost between layers, if you choose to make a layer cake instead.
