2 cups all-purpose flour
Cake:
1/2 cup butter or margarine, melted
1 1/2 cups granulated sugar
2 eggs
1 cup yogurt
1 tablespoon vanilla extract
2 teaspoons baking powder
1/4 teaspoon salt
Filling:
1 cup butterscotch morsels (chips)

Spray a 12 cup bundt pan with nonstick cooking spray.
Preheat oven to 350 degrees.
In medium saucepan, melt butter over low heat. Remove from heat. Stir in sugar until dissolved. Add eggs, yogurt and vanilla.
In medium bowl, combine flour, baking powder and salt. Add butter mixture to dry ingredients. Stir until just moistened. Do not overmix.
Pour half the batter into prepared bundt pan. Sprinkle evenly with butterscotch chips. Cover with remaining batter. Spread evenly, smooth top.
Bake at 350 degrees for 45 minutes or until toothpick inserted into center comes out clean. Cool on wire rack 20 minutes.
Remove from pan. Cool completely. Sprinkle with powdered sugar, if desired.
Makes 1 cake, 12 servings.
Tips: You may substitute chocolate chips and/or nuts in filling. For another more festive look, glaze the cake with a frosting and garnish with strawberries and/or sliced kiwi or other fresh fruit.
