    Chocolate Butterscotch Pie

    9" baked pie shell
    1 C packed light brown sugar
    1/3 C cornstarch
    1/2 tsp salt
    4 egg yolks
    3 C milk
    1 1/2 bars unsweetened baking chocolate,
    broken into pieces
    1 TBS butter
    1 tsp vanilla
    sweetened whipped cream

    Recipe



    In medium saucepan, stir together brown sugar,
    corn starch and salt. Beat egg yolks with milk;
    gradually add to brown sugar mixture, stirring until
    blended. Add chocolate. Cook over medium heat,
    stirring constantly, until mixture thickens and boils.
    Boil and stir for 1 minute. Remove from heat; stir in
    butter and vanilla. Immediately pour into prepared pie
    crust. Press plastic wrap directly on surface, chill 3
    to 4 hrs, until filling is set. Garnish with whipped cream.
