    Recipe Introduction


    George Dahlheimer, a grandfather, regularly takes home first-place trophies for his entries in the men's chocolate cake competition at Oregon's Clackamas County Fair and Rodeo. This cake, which won top honors, calls for a secret ingredient. Inspired by an article he read, George tried adding prunes to his chocolate cake. The result was moist and delectable.

    List of Ingredients




    CAKE:
    2 cups all-purpose flour
    1 cup unsweetened cocoa powder
    2 cups sugar
    2 tsp. baking soda
    1 tsp. baking powder
    1/4 tsp. salt
    1 cup milk
    4 2 1/2-ounce baby-food jars of pureed prunes
    2 tsp. vanilla extract
    4 egg whites
    1 cup coffee, at room temperature

    FROSTING:
    2 cups whipping cream
    1 pound semisweet chocolate
    2 tsp. vanilla extract
    Walnuts (optional)

    Recipe



    Preheat oven to 350 degrees. In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking soda, baking powder, and salt. In another bowl, blend the milk, prunes, vanilla extract, egg whites, and coffee. Make a well in the dry ingredients and then pour in the wet ingredients.

    Beat well for 2 to 3 minutes. Grease two 9-inch round cake pans and then divide the batter equally between the pans.

    Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack and let cool completely.

    To make the frosting, heat the whipping cream just until it boils. Remove from heat and add the chocolate and vanilla extract. Stir until the chocolate has melted and the mixture is smooth. Transfer to a glass or plastic bowl and refrigerate.

    For the next hour, beat the frosting every 10 minutes until it thickens. Frost the cake and decorate with walnuts, if desired.
    Serves 12.
