Dutch Pineapple Pie

List of Ingredients
Crust:
1 stick (8 tablespoons) butter, divided
1/2 cup brown sugar
1 teaspoon vanilla extract
1 cup flour
1/2 teaspoon baking soda
1 cup uncooked oatmeal (old-fashioned variety, not quick-cooking)
Filling:
1 (20-ounce) can crushed pineapple in own juice, undrained
1 cup granulated sugar
2 1/2 tablespoons all-purpose flour
2 eggs, slightly beaten
1 teaspoon vanilla extractRecipe
Heat oven to 350 degrees.
Make crust: Slice off 1 tablespoon solid butter and set it aside for use in the topping. Melt remaining 7 tablespoons butter in the microwave oven.
In a mixing bowl, combine melted butter, brown sugar and vanilla, stirring well.
In a small bowl mix flour, baking soda and oatmeal. Stir the dry mixture into the butter-brown sugar mixture. Press 3/4 of this mixture into the bottom and most of the way up the sides of a 9-inch pie pan. Reserve the remaining 1/4 of this mixture for topping.
Make filling: Combine pineapple, sugar, flour and eggs and cook over medium heat in saucepan until it thickens, stirring constantly. This will take about 5 minutes. Remove from heat and add the reserved 1 tablespoon butter and vanilla, stirring to melt butter into the filling. Pour filling into pie crust; crumble reserved crust mixture on top.
Bake 25 minutes. Remove from oven, cool and serve.
Serves 8.
