� C butter, room temperature
� C superfine or granulated sugar
1 egg
� tsp vanilla extract
1/3 C all-purpose flour sifted
powdered sugar, if desired
Recipe
Preheat oven to 325�. Line a 6x3 aluminum foil loaf pan with wax paper.
With an electric mixer, beat butter in a small bowl til soft & light. Gradually add sugar, beating til light & fluffy.
Beat egg in another small bowl. Gradually add to the butter/sugar mix, beating til light & fluffy. Stir in vanilla. Stir in flour to moisten; beat til light & smooth.
Spoon batter into prepared pan & distribute evenly. Bake about 55 minutes til edges separate from pan. Top should be golden & spring back when lightly touched in center.
Cool in pan 15 minutes. Loosen sides & remove by lifting edges of wax paper. Cool on wire rack.
