1½ cups flour
2 eggs, beaten
½ tsp salt
2 cups pared, chopped apple
½ tsp baking soda
1 TBSP lemon juice
1½ cups rolled oats, uncooked
1/3 cup raisins
1 cup firmly packed brown sugar
1/3 cup chopped walnuts
½ cup shortening, melted
Frosting:
1½ cups 10x sugar
apple juice
Recipe
Preheat oven to 375*.
Sift together flour, salt and soda. Stir in oats and brown sugar. Gradually add melted shortening and eggs, stirring with a fork till mixture is crumbly. Firmly press half of mixture into bottom of greased 9" square baking pan.
Mix apples and lemon juice; stir in raisins and nuts. Place apple mixture in even layer over crumb base.
Roll remaining oats mixture between 2 sheets of waxed paper to form 9" square. Remove top sheet of paper and invert dough over filling pressing down lightly. Remove paper. Bake for 30 minutes.
For frosting: Drizzle apple juice into powdered sugar until of frosting consistency.
