1 tablespoon gelatin (Knox)
1/2 cup sugar
1/4 teaspoon salt
4 egg yolks
1/2 cup lime juice (approx. 3 limes)
1/4 cup water
1 teaspoon grated lime peel
a touch of green food coloring (less than a drop)
4 egg whites
1/2 cup sugar
1 cup whipping cream
1 9" pastry shell, baked
Recipe
Mix gelatin, 1/2 cup sugar and salt in sauce pan.
Beat yolks, juice, and water together and blend with dry ingredients in pan.
Cook over medium heat to boiling point. Remove from heat, add peel and coloring.
Chill 1 hour, stirring occasionally, until mixture mounds. (Watch carefully, as once it starts to set it does so rapidly.)
Beat egg whites into soft peaks, add sugar gradually and beat into stiff peaks.
Fold gelatin mixture into whites. Fold in whipped cream,
Pour into pie shell. Chill.
Before serving, you may decorate the pie with whipped cream, lime slices and grated lime peel.
