    2 eggs
    1 cup sugar
    1 tsp. vanilla
    1 cup flour
    1 tsp. baking powder
    1/4 tsp. salt
    1/2 cup milk, heated
    1 Tbsp. butter

    Recipe



    Beat eggs until frothy. Beat in sugar. Stir in vanilla. Stir in flour, baking powder and salt. Heat milk and butter together, add stirring carefully. Scrape into a greased 8 x 8 pan.

    Bake at 350 degrees for approximately 25 minutes or until golden and tests done.

    Topping:
    2/3 cup packed brown sugar
    1/4 cup butter
    2 Tbsp. milk or cream
    1/2 cup coconut (can substitute nuts)

    Combine topping ingredients in a saucepan. Heat and stir until hot and sugar has dissolved. Spread over cake and return to the oven broiler for 3 - 5 minutes.


    ***When we use this sponge cake for Strawberry Shortcake, we leave off the topping, slice the cake in half, cover with macerated strawberries and whip cream.
