List of Ingredients
2 1/3 cups pretzels (2 cups)
1 tablespoon sugar
2 tablespoons margarine, melted
6 oz. can frozen limeade concentrate, slightly thawed
4 cups Lite vanilla ice cream (I used Blue Bunny No Sugar Added)
1 tablespoon tequila
1 tsp. lime zest Recipe
Preheat oven to 375.
In food processor or blender, process pretzels and sugar. Add 2 tablespoons of the limeade concentrate and the margarine. Process until thoroughly mixed. Press into bottom and up sides of 9" pie plate- deep dish o.k., don't worry if it only covers the bottom and just a little of the sides. Bake about 7 minutes; place in freezer to quick-cool.
Meanwhile, in mixer, combine ice cream that is just scoop-able (doesn't have to be real soft) with the remaining limeade and the tequila. Mix well, and pour into crust. Sprinkle zest on top, and freeze at least 3 hours. Top each slice with a dollop of whipped topping, if desired. (I also added ONE drop green food coloring to the ice cream mixture while the mixer was running.)
8 servings, about 200 calories each; 4 Weight Watchers points.
*NOTE* I think when I make this again, I'll use a regular graham cracker crust instead of the pretzels- the salt wasn't really even noticeable and the texture was kind of "chewy" instead of crunchy.
