    Pineapple Cake w/Cream Cheese Frosting

    This cake has NO SHORTENING in it, at first when I read the recipe I thought it had been left out, but NO! Just no shortening!

    List of Ingredients




    2 cups flour
    2 cups sugar
    2 tsp. baking soda
    2 eggs
    1 20 ounce can crushed pineapple INCLUDING juice
    1 cup pecans, chopped (can substitute walnuts if desired)

    Recipe



    Combine ingredients & pour mixture into 9X13 UNGREASED baking pan.

    Bake 350 degrees for 30-35 minutes.

    Remove from oven and cool on wire rack.

    CREAM CHEESE FROSTING
    Blend with a heavy mixer:

    8 ounces softened cream cheese
    4 cups powdered sugar
    1 tsp. vanilla
    1 stick of softened margarine or butter

    Spread on cooled cake.
