    Pound Cake Loaf

    Source of Recipe

by Laurel, from Moosewood Restaurant Book of Desserts

    Recipe Introduction

This is a favorite of mine. Reminds me of a homemade Sara Lee.

    List of Ingredients

1 cup butter, at room temperature
    1-1/3 cups sugar
    4 eggs
    2 teaspoons pure vanilla extract
    ½ teaspoon baking powder
    ¼ teaspoon salt
    1-3/4 cups unbleached white flour
    1/3 cup milk

    Recipe

Preheat oven to 350°. Butter and flour a 9x5-inch loaf pan.

With an electric mixer, cream the butter until light. Add the sugar and cream until fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla, baking powder, and salt, and beat well. Reduce the mixer speed to low and add the flour, mixing until well incorporated. Add the milk and beat until well blended, another minute or so.

Pour the batter into the prepared pan and bake until a knife inserted in the center comes out clean, about 1-1/4 hours. Cool in the pan on a rack before serving.

Serve it plain or with some berries or glazed with chocolate or spread with jam, or topped with ice cream…..

    (serves 8 to 10)
