1 c. boiling water
1 c. dates, pitted and chopped
1/4 c. butter, softened
1 c. white sugar
1 egg
1 tsp. vanilla extract
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt (opt)
1/2 c. walnuts, chopped
1 c. flaked coconut
2/3 c. packed brown sugar
6 tbs. butter
1/4 c. cream
Recipe
1) Pour boiling water over dates in a small bowl and let stand until cool.
2) Measure flour, baking powder, soda, salt and nuts into a small bowl. Stir to mix.
3) Cream butter and white sugar together in a mixing bowl; beat in egg and vanilla. Add flour mixture to creamed mixture in three parts alternately with date mixture in two parts, beginning and ending with dry mixture. Spread batter into a greased 9x13 pan.
4) Bake at 350* for 30-40 mins, or until toothpick inserted in middle comes out clean.
5) To make topping: Mix coconut, brown sugar, butter and cream in a small saucepan over medium heat. Boil for three mins. Spread over warm cake and brown under broiler.
