16 trimmed asparagus spears
1 T butter
1 small onion, minced
1/2 T dijon mustard
2 T milk or cream
1 t lemon juice
8 slices deli style ham
1/4 grated parmesan cheese
1 cup grated swiss cheese, divided
Recipe
Blanch asparagus spears for about 2 minutes and plunge into ice water to stop cooking.
Melt butter over low heat, add onion and saute till browned. Stir in mustard, milk and lemon juice.
Spread a small amount of the onion sauce over each slice of ham and top with 2 asparagus spears. Sprinkle with parmesan cheese.
Top each ham slice with half of the swiss cheese. Center 2 asparagus spears on top of ham slice and fold the ham over the asparagus.
Arrange ham slices in a lightly greased baking dish, folded side down. Sprinkle the remaining swiss cheese over the ham packets.
Bake in a 400 degree oven for 20 minutes or till cheese is brown and bubbly.
