5 1/2 cups shredded,cooked beef
2 Tbsp. oil
1 cup chopped onion
1 cup chopped red bell pepper
1 cup chopped green bell pepper
2 Tbsp. chopped jalapeno
1 tsp. salt
1 tsp. pepper
1 tsp. cumin
1 tsp. garlic powder
1 tsp. chili powder
1 can beef broth
12 oz. evaporated milk
1 can Rotel tomatoes and green chiles
8 oz. grated cheddar or pepper jack cheese
12 corn tortillas
Recipe
Add oil to a large heated skillet and saute the onion, peppers and jalapeno. Mix in all the spices and cook till onion is translucent. Add milk and broth.Bring to a simmer and remove from heat. Stir in beef and cheese. Cut tortillas into quarters and place half of them in a 9x13 greased casserole. Top with half the beef mixture. Repeat layers, ending with beef.
