Chicken & Wild Rice Casserole

1 box Long Grain & Wild Rice mix
2 tbsp. margarine
1 medium chopped onion
2 ribs chopped celery
1 can water chestnuts, drained
2½ cups chopped cooked chicken
2 cups grated cheddar cheese, divided
1 can cream of mushroom soup
1 cup sour cream
1/2 cup milk
1/2 tsp. salt
pepper to taste
1/2 cup soft bread crumbsRecipe
Prepare rice as directed, set aside.
Melt margarine in a large skillet over medium heat; add onion, celery and water chestnuts. Sauté until tender.
Stir in rice, chicken, 1½ cups cheese, soup, sour cream, milk & seasonings; spoon mix into a lightly greased 2 qt. casserole. Top with bread crumbs.
Bake at 350° for 30 minutes. Sprinkle with remaining cheese bake 5 more minutes.
