1 pkg. (6 oz.) Uncle Ben's Long Grain and Wild Rice with herb seasonings
3 c. cooked coarsely diced chicken or turkey
1 c. sliced fresh mushrooms, sauteed in 2 tbsp. butter
6 tbsp. chopped pimiento
1/2 c. chopped green pepper
1/2 c. chopped parsley
1 can cream of mushroom soup
1 can cream of celery soup
1 1/4 c. chicken broth
Sliced almonds
Recipe
Cook rice according to pkg. directions.
Add chicken, sauteed mushrooms, pimiento, green pepper, parsley, soups and broth and mix well. Add salt and pepper to taste.
Put in casserole (3 qt. or 9x13) and cover with sliced almonds. Bake at least 1 hour in 350 oven.
8 Generous servings
Note: Nearly everyone takes a second serving--so plan accordingly. Serve with salad and hot rolls.
