Chinese Hamburger Casserole

Recipe Introduction
This recipe has been a winner for family and group potlucks for the last 40 years. The recipe was a gift from my Mom's friend Marian who, as a wife and mother of six sons, cooked for a large group every day.
List of Ingredients
1 pound extra lean ground beef
1 medium onion -- chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 can bean sprouts -- drained
1 cup celery -- chopped
1/2 cup rice -- uncooked
1 1/2 cups water
1/4 cup low sodium soy sauce
5 ounces chow mein noodlesRecipe
Brown ground beef and onion in a large pan until meat loses it's red color, drain off any fat. Add remaining ingredients except chow mein noodles, mix well and pour into 9 x 13" flat pan.
Cover and bake at 350º for 30 minutes. Uncover and sprinkle with chow mein noodles. Bake uncovered for another 30 minutes. Noodles should be brown and casserole set.
Note: You must use canned or cooked and drained bean sprouts in this dish, fresh ones lose too much water and it won't set up. You may use the new low-fat cream soups in this with no problem.
You could also freeze the cooked hamburger in 1 pound
packages and keep it on hand for busy days when you are
short of time. We have done that, especially when hamburger
is on sale and we buy the bulk packs.
