This is the recipe as they presented it, BUT I added a small can of mild green chilis, and I also used part ketchup in the barbecue sauce. I probably used 1/4 cup ketchup and 1/2 cup barbecue sauce. It just sounded like too much barbecue taste for what it is. Turned out great!
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 lb. ground beef
1 can (15 1/2 oz) mild chili beans in sauce
3/4 cup barbecue sauce
1/2 teaspoon salt
1 package (8 1/2 oz) corn muffin mix
1 can (11 oz) Mexican style corn, drained
Recipe
Preheat oven to 400.
Mix onion, green pepper and ground beef in skillet, cook and stir over medium heat until ground beef is browned. Drain. Stir in chili beans, barbecue sauce and salt. Bring to a boil. Spoon into a 9" square or an 11x7 baking dish.
Prepare corn muffin mix as directed on box, stir in corn. Spread over meat mixture.
