Emma's Lucky Casserole

List of Ingredients
1 jar (20 ounces) salsa
2 15-1/2 oz. cans black-eyed peas, rinsed and drained
1 14-1/2 oz. can mixed greens, well-drained
1/2 pound ham, finely chopped
1 recipe cornbread mix
1-1/2 cup shredded cheddar cheese.
Recipe
• Preheat oven to 375°. Lightly grease a 9x13" pan. In medium bowl, combine salsa (reserving 1/4 cup), greens, black-eyed peas, and ham.
• Prepare cornbread mix according to instructions on package. Pour half of the cornbread batter on the bottom of the pan. Layer on the black eyed pea mixture. Pour remaining cornbread batter to cover the top of the pan.
• Bake for 60 minutes. Top with cheese. Return to the oven for 3 minutes or until cheese is melted. Garnish top with salsa if desired.
