1 lb. lean hamburger
1 1/2 T. chili powder
1 can (8 oz.) stewed tomatoes
1 can (4 oz.) diced green chilies DRAINED
1 can (12 oz) corn niblets DRAINED
1 small pkg. cornbread mix size for 8 x 8 pan
1/2 cup shredded cheddar cheese
Recipe
Brown hamburger and drain off grease. Add chili powder, chilies and tomatoes and mix well. Spoon into 9 x 9 inch baking pan. Spread corn over hamburger. Make cornbread following directions on package, adding 1/4-cup cheese. Pour over hamburger. Sprinkle with cheese and bake for 35 minutes or until the cornbread is done. Maybe cut into squares and serve or turn out the upside down cake. Lay a large sheet of foil over the pan, fold the edges down around the pan and place a platter on top of the foil. Turn over, cut and serve.
