Mexicalli Casserole

List of Ingredients
1# groung turkey breast
1 1/2 cup chopped onions
1/2 cup chpped green pepper
1 garlic clove minced
1 tsp. chili powder
1/2 tsp. salt
1 can kidney beans rinsed and drained
1 14 oz can diced tomatoes, undrained
1 cup water
2/3 cup uncooked long grain rice
1/3 cup ripe olives
1/2 cup shredded cheddar cheeseRecipe
In a large skillet cook the turkey, onions, green pepper, and garlic over med. heat until no longer pink and vegies are tender. Drain. Add chili powder and salt. Stir in the beans, tomatoes, water, rice and olives. Put into a 2 1/2 qt. baking dish, greased. Cover and Bake at 375º for 50 minutes or till the rice is done. Uncover and sprinkle the cheese on top. Bake another 5 minutes.
