1 pound ground beef
1 large chopped onion
salt to taste
pepper to taste
10 flour tortillas
1 (23 oz) can ranch-style beans
2 cups grated cheddar cheese
1 can Rotel tomatoes/chiles
1 can cream of chicken soup
2 cups grated jack or mozzarella cheeseRecipe
Brown ground beef, adding onion & seasonings. Cut tortillas into 1" strips. Blend together the RoTel and the soup.
Spray 9x13 baking dish with cooking spray and layer with 1/2 the tortilla strips, 1/2 the meat mixture, beans and cheddar. Follow with the remaining tortilla strips, remaining meat mixture, RoTel/soup mixture,
and jack/mozzarella cheese.
Bake at 350° for 1 hour.
