Butter or margarine
6 slices bread
2 cups cooked cubed chicken
1/4 cup diced onion
1/2 c sliced celery
1 (6½ oz) can sliced mushrooms or 1/3-pound fresh sliced
3/4 t salt
dash of pepper
2 T sweet rice flour
2 eggs
1/2 cup mayonnaise
2 1/2 cup milk or non-dairy liquid
In a buttered 2-quart casserole, layer a third of the bread with half of the chicken mixture. Add a third more bread and the rest of the chicken mixture. Top with bread.
Beat the eggs slightly. Blend in the mayonnaise and milk until smooth. Pour this over bread and chicken.
Bake in a preheated 325 degree F oven for 1 hour, until set.
