    This is really tasty! I make it with gluten-free bread and my family gobbles it up!

    List of Ingredients




    Butter or margarine
    6 slices bread
    2 cups cooked cubed chicken
    1/4 cup diced onion
    1/2 c sliced celery
    1 (6½ oz) can sliced mushrooms or 1/3-pound fresh sliced
    3/4 t salt
    dash of pepper
    2 T sweet rice flour
    2 eggs
    1/2 cup mayonnaise
    2 1/2 cup milk or non-dairy liquid

    Recipe



    Butter bread and cut into cubes.

    Toss chicken, onion, celery, drained mushrooms, seasonings and sweet rice flour together.

    In a buttered 2-quart casserole, layer a third of the bread with half of the chicken mixture. Add a third more bread and the rest of the chicken mixture. Top with bread.

    Beat the eggs slightly. Blend in the mayonnaise and milk until smooth. Pour this over bread and chicken.

    Bake in a preheated 325 degree F oven for 1 hour, until set.

    Serves 4 to 6
