Pork Chops w/Scalloped Potatoes & Onions

List of Ingredients
3 T butter or margarine
3 T all-purpose Flour
1½ tsp salt or to taste
1/2 tsp pepper or to taste
1 C chicken broth
6 rib -OR- loin pork chops, cut 3/4” thick
2 T vegetable oil
6 potatoes, thinly sliced & peeled (about 4 C)
1 med onion, sliced
Paprika & chopped fresh parsley (optional)Recipe
In a saucepan, melt butter; stir in flour, salt & pepper.
Add chicken broth; cook & stir constantly til mixture boils. Cook for 1 minute; remove from heat & set aside.
In skillet, brown pork chops in oil; season to taste.
In a greased 13x9x2” bake dish, layer the sliced potatoes & onion. Pour the broth mix over. Place chops on top.
Cover and bake at 350° for 1 hr; uncover and bake 30 minutes longer or until potatoes are tender.
Garnish with parsley & paprika, if desired.
Yield: 6 servings.
