Sausage, Cabbage & Potato Skillet

6 slices bacon
1 small onion, chopped
1-2 cloves minced garlic
2-3 medium potatoes, diced
1-2 tbsp. flour
1 small head cabbage, cut up, OR 2 cans sauerkraut, drained & rinsed
1 can condensed chicken broth
1/2 cup white wine
1 tbsp. brown sugar
1 tsp. caraway seed
1-2 tsp. salt
black pepper to taste
1 medium bay leave
1 pound cooked bratwurst or kielbasa
1 large apple, cored & dicedRecipe
Cook bacon until crisp, crumble and set aside.
Sauté onion, garlic & potatoes in bacon drippings; sprinkle flour over & stir to coat - cook & stir for 1 - 2 minutes and then stir in cabbage/kraut, broth, wine, sugar, caraway, salt, pepper & bay leaf. Keep stirring while you bring it to boiling. Add sausage, reduce heat, cover & simmer 30 minutes. Add apple & simmer 10 minutes more. Remove bay leaf, turn out into a warm serving dish & garnish with crumbled bacon.
