Sausage Casserole

1 cup uncooked rice
1 pkg. onion soup mix
2-3 tbsp. butter or margarine
2 cups hot water
1/2 cup chopped celery
1/2 cup chopped bell pepper
1 small chopped onion
1/2 cup mushrooms, sliced & sautéed
1 pound bulk sausage, browned & draine
1½ cups grated cheddar cheese
salt & pepper to tasteRecipe
Place rice in 2 qt. casserole dish. Add soup mix, dots of butter, and pour water over. Layer vegetables and sausage. Bake at 350° for 40 minutes; sprinkle cheese on top and bake an additional 10 minutes.
If using converted rice, sauté vegetables first and reduce baking time by about 15-20 minutes.
