    1 lb. Jimmy Dean sage sausage, cooked & crumbled
    2 zucchini, coarsely chopped (these are small squash, about 7-8" long)
    2 crookneck squash, coarsely chopped (same with these - about 7-8" long)
    1 large onion, diced
    1 can condensed cream of mushroom soup (or your choice of "cream of" soup)
    1/2 cup mayonnaise (I use light mayo)
    1 tsp. rubbed sage
    1 or 2 tsp. hot sauce (Tabasco, Louisiana Crystal, whatever)
    1 small jar pimentos for color (optional)
    3/4 cup buttered bread crumbs or cracker crumbs
    1/2 cup fresh grated parmesan

    Recipe



    Combine sausage, squash & onion (precook the squash & onion if you wish; we like ours tender/crisp, so I just start with 'em raw)

    Blend together soup, mayonnaise, sage, hot sauce & pimento; add to sausage/squash mix and spoon into a baking dish.

    Combine crumbs with grated parmesan; sprinkle evenly over all.

    Bake at 350° about 20-25 minutes or until topping begins to brown lightly.
