    Scrumptious Squash Casserole

    List of Ingredients

    2 lbs. yellow squash, washed and sliced
    1/4 cup onion, chopped
    1 can cream of chicken soup (can use reduced-fat variety)
    1 cup shredded carrot
    1/2 cup melted margarine
    1 cup sour cream
    1 8 oz. pkg. dry stuffing mix (such as Pepperidge Farm)

    Recipe

    Cook squash and onion in a small amount of water (I microwave for about 4 minutes, check for tenderness, then a few more minutes if needed.) Drain and mash with a fork. Stir in soup and sour cream; add carrot. Saute' the stuffing mix in the margarine. Spread half of the stuffing mixture into the bottom of a 2-qt. baking dish. Pour the squash mixture on top, and top with remaining stuffing mixture. Bake at 350 for 25 minutes. You'll get raves over this!!
