Splendiferous Zucchini Casserole

2 pounds of medium size zucchini, sliced 1/4 inch thick
2 tablespoons olive oil
2 cups chopped onions
1 clove garlic, minced
4 ounces sliced fresh mushrooms
3 eggs, beaten (or egg substitute)
2 cups sharp cheddar cheese, low fat
2 cups cottage cheese, low fat
1/2 cup Italian seasoned fine bread crumbs (or fine cracker crumbs)
2 tablespoons Mrs. Dash Garlic and Herb seasoning
Salt and pepper to tasteRecipe
Heat oven to 350°. Heat oli in a large skillet over medium heat. Add zucchini, onions, garlic, and mushrooms. Cook and stir 7 minutes. Remove from heat and place in a colander to drain. Combine remaining ingredients in a mixing bowl. Add zucchini mixture and toss gently to mix. Pour into a 9x12 greased or sprayed baking dish. Bake until a knife inserted in the center comes out clean, about 40 to 45 minutes. Makes about 10 to 12 servings.
