2 lbs zucchini or yellow squash (6 cups sliced)
1 cup shredded carrots
3/4 cups chopped onion
8oz pkg herb seasoned stuffing mix,crumbled in processor
1 10oz can cream of chicken soup
1 cup sour cream
1/2 cup butter or margarine
Recipe
Cook sliced squash and onion in boiling water 5 minutes and drain very well in colander. Combine soup and sour cream; stir in shredded carrots. Fold in squash and onions. Combine stuffing mix and butter. Put half of stuffing mix in 13 x 9 x 2” baking dish. Spoon squash mixture on top. Top with remaining stuffing mix. Bake at 350, for 25 to 30 minutes.
