3 c. summer squash, cut into small pieces
1/4 c. sour cream
1 T. butter
2 T. grated cheese
1/2 t. salt
1/8 t. paprika
1 beaten egg yolk
1 T. chopped chives
bread crumbs as needed
dots of butter
grated cheese as needed
Recipe
Simmer squash, covered, until tender - about 6 to 8 min. in small amount of boiling water. Drain well.
Combine sour cream, butter, cheese, salt & paprika, stirring over low heat until cheese is melted.
Remove from heat and blend in egg yolk & chives. Add squash.
Place mixture in baking dish. Cover top with bread crumbs, dots of butter and grated cheese.
