    List of Ingredients




    1 1/2 cup whole-wheat macaroni
    1 salt and pepper to taste
    3 cups tomatoes (skinned, if you prefer, and chopped)
    1 onion chopped
    4 bay leaves
    2 cups (8 oz.) reduced fat cheddar (or a bit less sharp, regular)
    1 cup walnuts (chopped)

    Recipe



    Preheat the oven to 400 degrees f.
    Cook and drain the macaroni.
    Saute the onions for about 2 minutes in a large skillet. Add the tomatoes, salt, pepper, and bay leaves. Cook over a medium heat, stirring frequently, until a think puree is formed. Remove the bay leaves.
    Oil a 2 qt. casserole dish. Make a layer with half the macaroni, then half the tomato puree, then half the cheese, and finally half the walnuts. Repeat the layers. Cook for about 25 minutes, or until the cheese topping is golden.
