6 cups zucchini, sliced
1 large onion, diced
1 cup sour cream
1 can Cream of Chicken soup
1 cup carrot, grated
1/4 cup butter or margarine, melted
1 package Stove Top stuffing mix, prepared as directed
1 cup cheddar cheese, shredded

Preheat oven to 350 degrees.
Steam zucchini and onion (or cook in small amount of water) until zucchini is tender-crisp.
Combine sour cream, soup and grated carrot. Mix with drained zucchini. Add melted butter.
Put half of the stuffing in a 9x13 pan, top with zucchini mixture, then add remaining stuffing. Sprinkle cheese over all.
