    Just make sure to dip dry onion rings into a thick wet batter, and fry immediately.

    I worked in a restaurant that had the most delicious and famous large onion rings in this area.
    They were BATTER dipped.

    Take a flavored batter mix. DRAKES makes a great crispy batter mix. Mix this batter mix with water, but be sure to leave the batter thick - thicker than pancake batter.

    Clean large spanish onions. Cut into slices about
    5/8 inch thick. Separate into rings. Use only the medium and larger rings to make your onion rings. Save the inner parts for another cooking project.

    Keep the rings DRY! Don't wet them with anything. Put them directly into the wet batter you prepared.

    Carefully lift them out of the batter one at a time, using a meat fork, and place into hot fat(about 375 degrees) or a deep fryer if you have one. A few little drips or streamers will come off the onions, but they should stay well coated. Leave them in the hot oil til they golden brown. Drain on paper towels.

    I mentioned the "Drakes Crispy Fry Mix" because that is what we used to prepare those famous ones I was telling you about above. I learned that over 30 years ago, and have made them the same way for my family all these years. That mix is still available most places.

    If you can't find Drake's, there are many other fry mixes available. Just make sure to dip the dry onions into a thick wet, batter, and fry immediately.
