    Alton's Puffy Chocolate Chip Cookies

    These are really so different from the chewy version. For one, they use shortening instead of butter, CAKE FLOUR instead of bread or a.p. flour, and baking powder instead of soda.

    List of Ingredients




    1 cup butter-flavored shortening
    1 cup sugar
    3/4 cup brown sugar
    2 1/4 cup cake flour
    1 tsp salt
    1 1/2 tsp baking powder
    2 eggs
    1 1/2 tsp vanilla
    2 cups semisweet chocolate chips
    nuts, if desired

    Recipe



    Cream shortening with sugars; beat until light and fluffy. Add eggs one at a time; add vanilla. Sift flour, salt, and baking powder ; add slowly to the mixture and combine well. Stir in chocolate chips. Chill the dough. Preheat oven to 375. Scoop out dough either with an ice cream scooper (6 to a sheet) or smaller tablespoonsfuls. Bake 13 minutes for large, about 10 minutes for smaller cookies, or until golden brown and puffy.

    Makes about 2 1/2 dozen of the large cookies.
