    1/2 C sugar
    1/2 C packed light brown sugar
    1 C unsalted butter, softened
    1 C unsweetened apple butter
    1 tsp vanilla
    1 egg
    2 C all-purpose flour
    1 tsp baking powder
    1 tsp baking soda
    1 tsp ground cinnamon
    1/4 tsp salt
    3/4 to 1 C chopped, toasted walnuts

    Penuche Frosting:
    3 T butter
    1/2 C packed light brown sugar
    1/4 C cream or half-and-half
    1½ to 2¼ C powdered sugar

    Preheat oven to 350°. Line cookie sheet with parchment.

    Beat sugars and butter till creamy. Add apple butter, vanilla and egg and beat till light and fluffy. Add flour, baking powder, baking soda, cinnamon and salt. Beat again till well combined. Stir in nuts.

    Drop by rounded tsp 2" apart onto sheets. Bake 16-20 min or till edges are light brown. Put on wire rack to cool. Then frost.

    Frosting:
    Melt butter and brown sugar in saucepan. Bring to boil and cook, stirring constantly, for 1 min or until slightly thickened (may thicken immediately). Remove from heat and cool 10 min (mix will begin to harden). Add cream and stir until smooth. Add powdered sugar 1/4 C at a time, beating well after each addition, until frosting reaches desired consistency.
