Beach Blanket cookies

List of Ingredients
1/2 cup butter (don't substitute margarine, they have the right texture)
2/3 cup sugar
1 egg
1 3/4 cup all purpose baking flour
1 tsp baking powder
1/4 tsp pumpkin pie spice
1 can vanilla frosting
Gel or liquid food coloring
Recipe
In a mixing bowl, cream the butter and sugar. Beat in egg. Combine the flour, baking powder and pumpkin pie spice; gradually add to creamed mixture. Cover and refrigerate for one hour or until easy to handle.
Divide dough in half. On a lightly floured surface, roll each portion into a 15 by 8 inch rectangle. Cut in half lengthwise; cut width-wise into thirds, forming six strips. Place 1 inch apart on ungreased baking sheets. Bend slightly if desired to form curves in cookies.
Bake at 350 degrees for 10-13 minutes or until edges are lightly browned. Remove to wire racks to cool. Tint frosting with food coloring; decorate cookies as desired. Makes 2 dozen cookies.
MTP note: I'm not sure I'm up to decorating cookies elaborately to look like beach towel designs. I think I'll just frost them in bright colors and stick them in a new sand bucket to approximate the beach feel.
